3/4 cup (1-1/2 sticks or 240mL) butter 2/3 cup (160mL) firmly packed light brown sugar 1 large egg 1 teaspoon vanilla extract 1-3/4 cups (420mL) all-purpose flour 3/4 teaspoon baking soda 1/4 teaspoon salt 1/2 cup (120mL) shredded coconut 3/4 cup (3.5 ounces or 240mL) coarsely chopped macadamia nuts 1 12-ounce package (1-3/4 cups or 420mL) "M&M's"® Chocolate Mini Baking Bits |

Preheat oven to 350°F (180°C). In a large bowl with electric mixer, cream butter with sugar until light and fluffy. Add egg and vanilla, blending well. Combine flour, baking soda and salt; blend well into creamed mixture. Blend in coconut and macadamia nuts. By hand, stir in "M&M's"? Chocolate Mini Baking Bits. Drop by heaping teaspoonfuls onto ungreased cookie sheets; flatten slightly with back of spoon. Bake 8 to 10 minutes, or just until set. Do not over bake. Cool 1 minute before removing to wire rack; cool completely. Store in tightly covered container. MAKES ABOUT 4 DOZEN COOKIES. |
